This sharpness tester shows, with an increase of 5 grams, the pressured needed to cut through a test medium. How does the Edge-On-Up sharpness tester work? The Edge-On-Up sharpness tester scientifically measures the sharpness of your knives. The holder contains a certified synthetic wire. You gently push your knife against this wire. The scale underneath the holder measures the applied pressure until the wire is cut. That is your test result. The pressure in grams is the value on the BESS (Brubacher Edge Sharpness Scale) C-scale. This BESS value is the final test result. The sharper the knife, the less weight you need, the lower the BESS value. A lower score is therefore sharper than a higher score. As such you have a scientific value for the sharpness of your knife. You never have to guess again or stick to terms as 'razor-sharp'. You namely have a concrete numerical value that allows to you even compare the sharpness. From 2000 BESS of an unsharpened knife to 0 BESS: ultimate sharpness. There will be few knives that will come close to the 0 BESS. A double-sided sharpened razor, a really, really sharp knife, ends up around 50 BESS.
